- About the Role
We are seeking a Category Product Technologist – Confectionery to join the R&D team. Reporting to the Head of R&D, this role will be responsible for the development and innovation of soft candy, marshmallows, and gummy products, from concept through to production scale-up.
The successful candidate will play a key role in product design, formulation, validation, and industrialisation, ensuring all products meet food safety, quality standards, and Good Manufacturing Practices (GMPs).
You will act as a critical link between R&D, pilot plant operations, and manufacturing, supporting product launches and continuous product improvement.
- Key Responsibilities
Product Innovation & Development
- Conduct consumer and category benchmarking, including competitive analysis and sensory profiling for confectionery products.
- Contribute to the innovation pipeline, generating new product ideas and concepts.
- Analyse consumer trends and regional preferences to develop targeted product briefs.
- Design and develop new confectionery products, using experimental product development techniques.
- Define product and ingredient specifications, including testing protocols and in-process control points.
- Develop detailed nutritional and ingredient specifications to meet consumer and production requirements.

Project Management
- Manage multiple product development projects within the confectionery category.
- Provide technical insights during project planning and decision-making processes.
- Collaborate with cross-functional teams to deliver projects on time and within budget.
- Support the handover to manufacturing, ensuring documentation, reporting, and knowledge transfer.
Technical Support
- Manage and execute product stability studies related to recipes and packaging.
- Conduct trials in laboratories, kitchens, and pilot plants.
- Support product industrialisation and scale-up processes.
Continuous Improvement
- Approve Quality Control samples to ensure product consistency.
- Perform competitive and sensory analysis to support product development.
- Assist in flavour and texture matching programmes.
- Investigate and troubleshoot product-related issues.
- Conduct product analysis and develop new testing methods where required.
- Candidate Profile
Education
- Master’s degree in Food Technology or Food Engineering
- 5+ years of product development experience in confectionery or similar
